Service Soapbox: The Baby Shower

Last Saturday was the first event for the Service Soapbox, and I was so proud to be on the committee. We collected over $2000 in baby items for the March of Dimes Teddy Bear Den! A huge success. We are so grateful to all who donated their time and made donations.

*It took me all day to post this clip. I was terrified to see myself on the video and still haven't watched it. I hear that I am at the very beginning saying my blog's name in an overly chipper voice.  I am posting it today to give this great cause more publicity. I'm trying to remember that this event is bigger than my too-large nose and stick-straight hair.

Our service project supported the March of Dimes' Teddy Bear Den. We threw a baby shower for needy moms. It was really fun for us and the March of Dimes were so grateful.
We had so many wonderful treats donated. Those chocolate cupcakes from Sweet Tooth Fairy were to-die-for!
The decor was so cute. I especially loved the tissue-paper topiaries from House of Smith's and the floral arrangements from Garden House Floral. (I won one  of these floral arrangements in a drawing! It is sitting on my table and those lilies smell heavenly!)

And a special thanks to everyone who donated! The blog-o-sphere is so generous! I was shocked at how many presents were piled up on the table when the event was over. It was inspiring!

Weekend Wrap-Up.

I have a post-vacation hangover. I'm too exhausted to clean, so we are still living out of our suitcases. We've been in Idaho visiting J's parents. I'm not sure what it is about that place, but it relaxes us all.  It is so peaceful in the country.

I met Miranda while I was there. We shared trade secrets with each other. She taught me the purl-stitch and I taught her to use Adobe Illustrator. She is just as I imagined her: totally darling!

All I could get my hung-over brain to do today was craft, so I pulled out my magnificent, new markers. I never grew out of my love to color, and was totally thrilled when I discovered that coloring can be a grown up thing too! Copics are amazing. I am just beginning to use them, but I'm totally hooked on shading and blending.

My sister came over today and we colored and stamped. I think I sold her on copics as well. I overheard her telling her husband that she "needs them."

I made a couple mother's day cards. I copic-ed up that cute Dahlia from Papertrey Ink for my Dahlia-loving mother. Can't wait to send it on.

Sloppy Joes.

As a newlywed, the kitchen was a daunting place. I didn't know a pot from a pan. I coerced my husband into splitting the cooking responsibility with me, and he introduced me to the joy of simple meals. Tacos and spaghetti were almost every night. My mom received frequent phone calls from me needing to know how to boil and egg or bake a potato. (Googling wasn't a concept I'd mastered at the time.)

Now, 8 years later, I am the queen of my kitchen (and google obsessed...). Although I love to whip up a fancy meal now and again, we still embrace simple and quick meals.

Sloppy Joes are a new favorite at our house and I believe this is the recipe we will be eating in heaven. It is really that good. Truly. It is everything the name claims and will not stay in the bun. Serve with a napkin...or maybe a wet wipe. And don't wear white clothes.
SLOPPY JOES
1 lbs extra-lean ground beef
1 medium onion, diced
4 garlic cloves, minced
1 jalapeño pepper*, seeded and minced
1 medium red bell pepper, diced
1 - 15.5 oz can pinto beans
1 1/2 cups tomato sauce
2 tbsp tomato paste
1 tbsp red wine vinegar
1 tbsp molasses
1 tbsp Worcestershire sauce
1 tsp dry mustard
3/4 tsp salt
pepper to taste
hamburger buns

Brown the meat and onion in a large pan over medium-high heat for 5 minutes, breaking up the meat into crumbles as it cooks. Pour the drippings out of the pan and discard. Add the garlic, jalapeño and red pepper and cook 5 minutes more. Stir in the rest of the ingredients, reduce heat to low and simmer for 5 minutes. Serve on buns.

*My husband doesn't like spicy food, but the jalapeño really adds flavor to the dish so we still use it. If you are worried about heat, remove the veins of the jalapeño along with the seeds.

So simple. I like to serve it with some sort of fresh fruit or salad. Mmmm...I'm dreaming of eating this with a big helping of watermelon.

I was thrilled when Downeast Basics asked me to do a review for them. I had a really hard time choosing what I'd review because their new line is amazing! After much indecision, I finally chose the Smell the Roses top, and was so happy I did. 
This top defines spring. It is the most beautiful pink and the fabric is comfortable. It is sheer, so I wear one of my favorite undershirts with it. (I was introduced to Downeast's Wonder Tee by my sister-in-law and am hooked.) The Smell the Roses top is a perfect addition to my being-revamped-wardrobe. It makes me feel beautiful.

Formspring FAQs.

I'm having so much fun answering all your questions over on Formspring. Please keep them coming. I'm loving it!

I seem to be getting questions every 3-4 days about my hair and makeup, so instead of answering them over there...I decided to bring it to my blog. I am no hair and makeup expert, but I have found some products that I truly love. Others, I buy because they are a bargain.

When it comes to make-up, I am pretty boring. My entire stash is from only 2 companies: M·A·C and Mary Kay. A family member of mine sells Mary Kay, so I get it for a great price. I really like Mary Kay, but I couldn't give up my M·A·C eyeshadow, eyeliner or lipstick - even for a great discount. I really tried to, but I ended up going back.

I have a few make-up items that I can't live without.
01. M·A·C fluidline gel eyeliner. This is amazing stuff! It lasts ALL day and goes on easily with a brush. I have it in Blacktrack.
02. M·A·C eyeshadow. I love the colors they offer and the way it stays on all day. I usually stick to coppers and plum colors. My ALL time favorite color is Woodwinked. I think it looks good on everyone.
03. M·A·C lipstick. I use Viva Glam V the most, but I like the blue-pink color of my Viva Glam VI as well. I adore my Mary Kay Lip Gloss! I actually have three colors that I alternate between. The one shown is Gold Rush, but I think my favorite is Fancy Nancy.
04. Good Brushes. Someday, I'd like to own the M·A·C brushes, but they aren't in the budget. In the meantime, I found these Sonia Kashuk Brushes from Target work pretty great.


When it comes to make-up, Mary Kay is barely above average. However, when it comes to skincare, I think their products are amazing!! I use their entire Timewise line, including their microdermabrasion. I really, really love it. The little blue bottle is their Cooling Eye Gel. It helps with bags under the eyes from staying up too late too many nights in a row.

I adore hair products! I alternate between different shampoos and conditioners. I really like Nexxus, which I am using now, but I also love Biologe and Nioxin. (I bought my ginormous Nexxus bottles at Costco. I think they were around $25 each.)

I am passionately in love with my straight iron. My hair stylist, Julie, recommended it to me and it was well worth the money spent. It is this one by Infrashine. It is normally $120, but you can sometimes find it for $85-90.

The three products I use and could.not.live.without are:
Nioxin Thickening Spray
Aquage Uplifting Foam and
Modern Elixers Styling Cream

BLT Chicken Salad.

I am a bit of a tomato snob. I can barely stand to eat a fast-food tomato and am usually disappointed by the ones I purchase at the store. Last week, however, I had some great luck.  I was meandering through the produce aisles of my favorite local grocery store and spotted these red beauties. Tomatoes like these are hard to find here in March. I couldn't pass them up. When I brought them home, J and I decided these babies deserved to be in one of our favorite meals: The BLT Salad.

This is a salad any man would approve of. Full of protein and a BBQ salad dressing. (It's pretty dang good to us women-folk, too.) 
BLT Chicken Salad
1/2 c. mayonnaise*
1/4 c. bbq sauce (honey dijon)
2 tbsp. grated onion
1 tbsp. lemon juice
1/2 tsp. pepper
2 lg. tomatoes, chopped
8 c. leafy lettuce, torn
3 c. chopped, cooked chicken (grilled is nice)
10 slices bacon, cooked and crumbled*
2 hard-boiled eggs, sliced

Combine mayonnaise, bbq sauce, onion, lemon juice and pepper for dressing. Cover and chill thoroughly. Press chopped tomatoes in paper towels to remove excess moisture. Arrange lettuce on serving plates, top with chicken and tomatoes. Spoon dressing mixture over and top with bacon and sliced eggs. Serve immediately.

*We used lowfat mayo and "Real Bacon" pieces to cut out some of the fat and calories. It was still seriously delicious.

Merci.

10 years ago, when I was in college, I taught a class at my church once a month. At the end of the year, one of the class members wrote me a note thanking me for the time I put into my classes and telling me how much she enjoyed them. I was so grateful for that letter. I was never sure if my classes were any good or if anyone was getting anything out of them. The letter was from an almost-stranger, but it meant so much to me that I couldn't throw it away. It is still sitting in my keepsake box.

Since then, I made a goal to write thank-yous more often. On the first (or there-abouts) of every month, I write 4-5 thank yous or thinking of you letters and mail them out. I send out the obvious ones, thanking for gifts or service, but I also try to pick a few unsuspecting recipients. Last month, I sent letters to an old college professor, 2 long-lost high school besties, and a few bloggers that have inspired me. I am sure a lot of them don't think twice of the little notes in the mail, but I hope that I give a little cheer every once in a while.

I don't always make my cards, but this month I did. Oh, and whenever I craft, my daughter is by my side. She pulled this bird cage stamp out of the same stamp set and made her own card. I think she has a real eye for color, don't you think? (hehe.) She also took this picture of her card after seeing me take a picture of mine. She's my shadow.

April Fools.


It's already April! I seriously can't believe it. (Especially because it is snowing outside RIGHT now. Utah weather is so weird.) Here is this month's installment of the goal calendar (click, save and print it out.) I am still trying to decide on my 5 goals for the month. One of them will be to continue my training for the 5k in June. A 5k may seem like a small fete for some of you, but I am a non-runner. It will be a huge accomplishment for me.

A few items of business:
